For many of us, Labor Day signifies the end of summer and back to school. It means a well deserved day off to enjoy our families and friends over a long weekend. Maybe even our last venture out before we settle in for the fall and winter months. Our flags come out, we hit the streets for our local parades and festivals, our grills heat up and our white shorts and shoes are reluctantly put away until next spring—although I have been guilty of breaking that rule!
After I make an early trip to our local Goodwill Store for their 50% off sale, and then hit a few of the Labor Day sales, my family (minus my vegetarian husband) plan to grill steak ($3.99 lb. at Sprouts) and fresh veggies. Then we will top it off with one of our favorite desserts—pound cake with fresh berries, syrup and fresh whipped cream. It’s so easy!
I have never attempted to cook a pound cake, so I buy mine. I layer slices on a cake pedestal with a bowl in the center filled with fresh berries (this year it will be strawberries and raspberries). I puree a few of the berries with a little water and sugar (to taste) to make a syrup that can be drizzled over the top of the cake and berries. Then top it off with homemade whip cream. Now in my opinion, there is nothing better than homemade whip cream—just me and my spoon!! I buy the heavy whipping cream and whip it in my Kitchen-aid mixer. You can make as much or as little as you want and you can add as much or as little sugar as you like. My mouth is watering just thinking about it! Give it a try.
